★★★★★ Possibly the best racing game ever made in terms of polish, enjoyability, aesthetics, etc. The OST is amazing. The graphics were great at the time. The car catalog's acceptable. The tracks are mostly great, though a bit few and the fictional tracks outshine the real ones, usually. The upgrading and tuning is kinda' impervious and awkward. The license system's a little tedious. But it's really classy and posh and nostalgic for me. A racing game with everything I want and little of the guff.

★★★★★ Joyous. The funnest game I've played in years. It's like all of the 3D action-platformers of the GameCube era mashed into one. Movement is fluid. World design is detailed. Story, characters, and voice acting are fun and charming. OST is very solid. It's a platformer with a balanced amount of collectathon elements. The hats and badges work well enough. The combat is OK, not great. Could use a hint more polish in hit detection and stuff, but otherwise it's cute, fun, open, and joyfulβ€”a rarity.

Oh there's definitely a good game hidden under Zelda II's nonsense, I don't think that makes you an apologist. If you could just save a little more often, and if the extra lives didn't disappear forever once you pick them up, those alone would be a big improvement and might have even saved Zelda II from infamy (from what I've seen and heard, anyway). There must an improvement patch out there that addresses these problems by now.

Honestly I don't see Metroid Prime 2 and 3 getting the same remaster treatment as Prime 1. It makes too much sense, and as we've seen time and time again, something making sense doesn't mean Nintendo will do it. I hope I'm wrong of course.
As someone who's beaten both the original on Cube and now the remaster, I highly recommend just playing the remaster to most people unless they're a purist. It's the exact same game, 1:1, but now it looks gorgeous and has every control option under the sun, including pointer controls. (I couldn't make up my mind between modern twin-stick or original Cube controls, so my first play through was twin-stick, then I switched to Cube to finish off the 100%, and I found I liked them equally.)
Prime really did do remasters right. It's not just an upscale, they remade every texture entirely. If Prime 4 came out on Switch and looked like this, I would've been over the moon.

Oh you're Canadian too? I don't think I knew that. Yeah, shipping to and from Canada is rough. It cost me an arm to send my RGB modded SNES back to Video Game Perfection (of OSSC fame) in the UK for warranty, when I first got into console mods. Won't make that mistake again.

Mario Wonder has indeed been wonderful. You can plow through it quickly but I've been savoring it.
Ditto on both the SCP Foundation and brutalist architecture.

To answer your question...

- LOZ: A Link to the Past (I've dabbled but never gave it a serious try. But before I do that, since I like to do things in order, I'll probably tackle Zelda II using an improvement patch to make it less of a hellscape.)
- Metroid Prime 2 (Prime 2 and 3 have been on my list forever anyway, but Prime Remastered reignited that spark. Prime Remastered was my personal GOTY in 2023.)
- Super Mario 3D World + Bowser's Fury (I really liked 3D World on WiiU, I'm down for replaying it and of course its little expansion thingy.)
- Ultimate Doom (Specifically a run, combining a run of 100% kills/items/secrets, and pistol-starting every level, neither of which I've ever done. And nothing incentivizes looking for secrets like starting with just a pistol.)
- Picking up a Saturn and giving it the ODE treatment
